Brandy is distilled wine — any spirit distilled from fermented fruit juice. Cognac and Armagnac are the apex expressions, both from southwest France, both strictly regulated. The greatest secret: the 19th-century cocktail canon was built on brandy before Prohibition and the phylloxera blight. The Sidecar, Brandy Crusta, Vieux Carré — all brandy cocktails.

Cognac vs. Armagnac

Cognac is double-distilled in pot stills to a relatively high ABV, producing a refined and consistent spirit. Armagnac is typically distilled once in a continuous column still to lower ABV, preserving more raw grape character. Armagnac is wilder, more individual, and generally better value.

The Age Grades

VS & VSOP

VS is minimum 2 years; VSOP is minimum 4 years. In cocktails, these are the working tools — the extra complexity of XO disappears under citrus and ice. Pierre Ferrand 1840 was specifically designed at higher proof for cocktail use, in collaboration with historian David Wondrich.

Armagnac: The Better Value

Smaller production scale and single-distillation character make Armagnac frequently superior dollar-for-dollar. Dartigalongue Hors d'Age is the proof: extended aging, extraordinary complexity, at a fraction of the Cognac equivalent.
